Drum Roll Please

It's been a while since I've updated on my adventures in Weight Watchers. Well, I weighed in today and have officially reached a 10% weight goal of 21 pounds lost. Its taken a long time, but hopefully I'm on the right track. I've been increasing my workouts, trying to eat more fruits and veggies and trying to cut out my sweets. I've got about 20 more pounds to go before I'm happy. I'm thinking if I put my mind to it I can do it before June!!!!!

Adding another recipe under my belt from my "Crockpots, Casseroles and Soups" adventure every week.

Last night I made French Dip Sandwiches and Jeff liked them so much he actually woke me up to tell me he was dreaming about how good they were.

Here are the ingredients:
  • chuck roast
  • 1 can french onion soup
  • 1 can beef broth
  • 1 can beef consomme
  • 3 beef bouillon cubes
  • sub sandwiches

What you do:
  • Cut the roast in half. It will cook faster this way
  • combine soup, broth and consomme into a bowl and mix briefly and then pour over roast
  • add the 3 bouillon cubes
  • cook on high in crock pot for 6-8 hours
  • shred roast and put in bowl
  • I then poured the dipping sauce into a strainer to catch any excess fat floating around
  • Put the shredded roast on a sandwich, ladle up some of the dipping sauce in a small bowl and you are good to go.

Mr. 11-month-old

Our little guy is now 11-months-old. We can hardly believe it!
Caderyn is:
  • Eating more and more solid foods. He loves hamburger and pears. 
  • Starting to walk. This week he will let go of the furniture and take two or three steps before sitting down. 
  • Pointing at everything and understanding some of it. When I say, "Caderyn where's the light?" he looks up at our light and points to it. 
  • He is still into everything
  • Very goofy and very stubborn
  • Not a snuggler. Sad face. 
  • Loves throwing things. 
  • FAST!
  • A big fan of his mommy when she comes home for her lunch break and a big fan of his daddy when he comes home for his.

Last night I attempted another dinner from my Crockpots, Casseroles and Soups magazine. It was pretty good. The next time I make it I will definitely modify a few things and I'll include them in this post.

The Dinner: Cheesburger Biscuit Bake

Ingredients:
Hamburger
1/4 c. ketchup
1 8. oz can of tomato sauce
Dash of pepper
1/4 c/ of onions (I used a little more)
biscuits (I used the Pillsbury ones)
Cheese


What to do:
Brown hamburger and onions together. Drain and add ketchup, tomato sauce and pepper. I also added some Cajun spice that Jeff loves. Make sure everything is mixed. In an 8 in. baking contraption, put half the mixture on the bottom of the pan and then layer with cheese and then put the rest of the mixture over the top of the cheese and cover that with cheese. Now the recipe I follows says that the next thing you do is put the uncooked biscuits on top of the mixture. covering it. Then you put this in the oven and bake at 400 degrees (preheated) for 18-22 minutes.
My dilemma last night was that the biscuits weren't getting fully cooked and were still gooey after two of them were burnt black. So I modified a bit...next time I would suggest baking the biscuits seperately.


Despite a little gooey bread at times, Jeff really liked it!

I'm not giving up anything for Lent.

If this title shocked you then good. That's what I wanted it to do. NOW, read further.
I spent the better part of a week figuring out what I wanted to give up for Lent. I thought about giving up sweets, but I've kind of already done that since I'm doing Weight Watchers. I thought about giving up drinking, but I don't really drink anymore (maybe like once every two months). I thought about giving up TV but I don't really watch it that much anymore because I'm cleaning or doing homework or chasing after the little guy. I thought about giving up swear words, but I've been working on that since the babe was born.
I just couldn't figure out what to give up.
In a previous post, I talked about how Jeff and I were struggling to get to Church on Sundays. It wasn't that we were losing our faith, we just had difficulty finding times that matched our schedules.

So Jeff and I had a fairly long talk a couple days ago about how this was just ridiculous and we needed to go to church. I did some research around my work, where they just so happen to have Mass every day and we found some Monday afternoon times that would work really well with both of our schedules.
SO the point of this blog is that instead of giving up something for Lent, Jeff, Caderyn and I are going to make a commitment every Monday rain or shine to go to church together and kick this bug we've been fighting.

We survived!

Welp, we made it back safe and sound and EXHAUSTED from our second girls trip. This year we went to Bosie. It was a blast except I was too sick to go our on Friday. Bleh!
We're already looking forward to our next trip back to Boise and then who knows where. Maybe L.A. or Phoenix! Yeah!

Receipe for my Dad

Dad: This post is for you.
You wanted to how to make the Weight Watchers S'more dessert that I make nearly every night. Here's how you do it. I loves it! Yes, loves it.

S'more:

Ingredients
1. 1 1/2 graham cracker broken into 3 squares
2. Marshmellow fluff
3. Cinammon
4. Chocolate chips

Place the graham cracker squares on a piece of tin foil. Place 2 tablespoons of the marshmellow fluff on two of the graham cracker squares (one scoop per square). Sprinkle cinnamon over the top of the fluff and then place about ten chocolate chips on each scoop of fluff. Stack the graham crackers so its a triple decker and wrap in the tin foil.

Turn oven on to 350 degrees and place tin foil wrapped graham crackers in the over for 5 minutes.
Unwrap and enjoy all of its gooey goodness for ONLY 3 points!

Hooray! My girls weekend has finally arrived...and I'm sick.
But its only a cold, so, I will survive!

Scrumptious

Today I tested out my first meal from the magazine I bought on Friday called, Crockpots, Casseroles and Soups.
I made Beef Barbeque and it was delicious!
Here are the ingredients. I didn't take any pictures because Jeff at it all before I could!

  • Chuck roast
  • 1 cup BBQ sauce
  • 1 tablespoon Dijon mustard
  • 2 teaspoons brown sugar
  • 1/3 cup of onions sliced (depending on how much you like onions you can add more or less)
  • 1/2 cup red or green pepper sliced
  • 1/2 cup apricot preserves (I used apricot jelly)
I cooked it on low for 8 hours and then you serve it on hamburger buns. YUM!

Working full-time and going back to school, I barely have time to sleep, so anything where I can make dinner with little or no work makes me very happy.

Eh???

Today I found out that my ear drum burst due to a really bad ear infection I have. I have to be on antibiotics for two weeks because it's so bad.

I had no idea you could get ear infections past the age of 10...guess I learned something new :0)

Also, when the doctor asked me how I didn't know I had an ear infection? Didn't I feel the immense pain throbbing?

My answer was this:
"I guess it was hurting. I don't know, I gauge my pain so differently now. It didn't feel like labor, so I guess it didn't hurt."

She got a good laugh out of that one.

And how's YOUR week going?


Although my week started off pretty rough. Its steadily gotten better. I'm so happy its Friday!
Highlights of this week and the forthcoming weekend:
  • My parents bought their plane tickets to come out for Caderyn's birthday in March. That is almost less than one month away!
  • I got an A on my Children's Literature quiz
  • I shared a few good laughs
  • I got back into the studying groove
  • I was able to make Jeff and dinner AND cookies this week. With my schedule right now its usually hit or miss.
  • Caderyn gave me lots of snuggles.
  • I lost 1.6 pounds. This puts me at 19.5 lost so far. Twenty more to go! Whoo!
  • I got to eat a cupcake
  • Jeff's mom came into town and took Jeff and Caderyn out for lunch. This left me home alone for about a half hour when I got home from work and I was able to scrub the bathroom until it glittered, yes, glittered.
  • I bought a book called Crock Pots, Casseroles and Soup and have great expectations to make at least two to three dinners this week. Let me tell you, its so hard working full time, going back to school and being a full-time mommy. Poor Jeff gets stuck on his own for food a lot.
  • I am going to take Lucy for a walk in the snow when Jeff gets home for dinner in about twenty minutes.
  • I have no pressure of deadlines tomorrow so I'm going to get ahead in some homework and hopefully finish a project. Yeah!
  • I'm going to work on my crosswords puzzles that I haven't been able to do during the week.
  • Tomorrow I have to go to work, but that's okay because I'm helping out with the St. Jude's Children Hospital Rummage Sale at Carroll.
  • I'm going to the Feb-ru-licious Valentine'd Day Fair tomorrow with some friends. Can anyone say FREE samples and lots and lots of Valentine's goodies. I'm so excited!
  • Jeff and I are going to Avatar in 3-D
  • Sunday is my day to sleep in thanks to the hubby. Life is good.
  • Superbowl is Sundayand my inlaws will be here!

The Month of Loooooooooooooove

Since corporate America has designated February as the month of love, I thought I would try and play into it a little bit.
Every day this month I am going to try and post about something or someone that I love.

All day and everyday I love my sweet little boy.
He is the one of the best things that's ever happened to me.
He put a lot of things into perspective for Jeff and I. 
He is the reason I breathe, the reason I live. 
I love his smile and his laugh and his sense of humor. 
I love his curiosity and determination.
