Today I tested out my first meal from the magazine I bought on Friday called, Crockpots, Casseroles and Soups.
I made Beef Barbeque and it was delicious!
Here are the ingredients. I didn't take any pictures because Jeff at it all before I could!

  • Chuck roast
  • 1 cup BBQ sauce
  • 1 tablespoon Dijon mustard
  • 2 teaspoons brown sugar
  • 1/3 cup of onions sliced (depending on how much you like onions you can add more or less)
  • 1/2 cup red or green pepper sliced
  • 1/2 cup apricot preserves (I used apricot jelly)
I cooked it on low for 8 hours and then you serve it on hamburger buns. YUM!

Working full-time and going back to school, I barely have time to sleep, so anything where I can make dinner with little or no work makes me very happy.
