Simply Scrumptious

Another successful crockpot meal without a picture. The husband and my brother devoured this before I could take any pictures. I modified the recipe a little and I think it made it better.

     Flank Steak
     1 TBSP Ginger
     1 TBSP Crushed Red Pepper Flakes
     1/2 TSP Garlic Power
     1/4 TSP Pepper
     Red and green peppers
     (actual recipe also calls for green onions- I used mushrooms instead)
     1/2 cup of soy sauce
     1 can of cola- I use Coca Cola
     (actual recipe also calls for fresh gingeroot, but this is expensive to buy and the ginger seasoning should be enough. I also didn't like how strong this tasted the last time I made it. It also calls for fresh minced garlic...Jeff's not a garlic fan so I omitted this)

In a smallish bowl combine the ginger, red pepper flakes, garlic powder and pepper. Mix in around a little bit and then lightly pat all over your flank steak. Put your seasoned flank steak in the crock pot. Slice the green and red peppers- you can do this however you want, I like to slice them long. Put in crock pot. Then add soy sauce and cola and mushrooms. Cook for 6-7 hours on low. It cooks pretty fast. Shred and slice the meat and then serve on tortillas with some cheese and anything else you think sounds good. I served it with mushroom flavored rice- yum.
